Southwestern Quinoa Salad

A few years ago a favourite coffee shop that I would happily cross the border to visit every week (though I don’t) offered a snack sized salad that I fell in love with. The flavours were amazing and I always felt great after eating it because it was so healthy!

I knew I needed to create something similar that we could enjoy at home. I pulled a few things from the main ingredient list and added in some extra of others. I worked to create a stronger flavour because garlic, lime and cilantro are just SO perfect together! After a few tries I got the combination to taste just the way I wanted and have been making this recipe regularly ever since!

What’s so great about Quinoa? A lot!
1) Gluten free
2) Usually organically grown
3) High in protein, fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and antioxidants!
4) So many health benefits- just Google “Quinoa” for more info!

I love cooking because of the ability to be adventurous. You can often add more of “this” and less of “that” and customize tastes to your preferences without messing up the end result! This recipe is a great one if you like having that option!

List of ingredients

Quinoa- 2 cups cooked and cooled
Black beans- 1 cup rinsed
Corn (canned)- 3/4 cup
Red pepper- 1/2 cup diced
Green pepper – 1/2 cup diced
Tomato- 1 large or 7-8 cherry chopped
Cilantro- 1/4 cup finely chopped
Garlic- 2 to 3 cloves minced
Lime- juice of 1/2 lime
Olive oil-  1 tbsp
Salt- 1/2 tsp
Cumin- 1/4 tsp
Throw everything together in large bowl and mix!
Refrigerate for at least an hour before serving.
Serves 4-6

TIPS:
~instead of leaving the quinoa in the pot after cooking, try spreading it out on a large plate. I find it cools faster and more evenly that way!
~peaches & cream corn adds a little bit of sweetness to this dish. It’s a personal preference over regular canned corn.
~ cherry tomatoes also improve upon the variety of flavours so I usually choose them over other types for this salad.
